I think that the black and white scene was eric's work it looks similar to his work on (mickey mouse get a horse)
If I had to guess I'd say Dale Baer did the Jungle Book sequence.
I got a confirmation I emailed Dale Baer and he said he animated the Snow White and Cinderella parts.

Sierra Lewis confirmed her work and also confirmed Eric's work, which is the black and white stuff, as expected by MMFS, and also includes the Homer's bare necessities part. Lewis animated Marge, Maggie, and Lisa for the sorcerers apprentice segment.
