It’s interesting to me that so much of the genga released recently for JJK has been black and white, without the usual colors for delineating shadows, highlights, etc. Anyone have any idea why this might be?

Looking at the finished cut it looks like it only has a single layer of shadows and no highlights so colours would technically be superfluous.
When official account posts video production materials, they're taken from rush (can also be called LO, genga, etc satsu, satsu standing for satsuei). Basically the materials are processed by compositing staff in the same way the final cut would be. In order for things to be layered correctly, empty space has to be covered so the drawings are either cut or filled. There's different way to do it but in this production, they're doing the BG in grey and for the cels, the empty space is white while any colors is grey.

It wouldve been coloured with the colour coded stuff, but after being scanned and having all layers combined they switch to black and white
