maquia and SAO, both fairly recent titles that have well animated dragons, I recommend checking their booru posts for some cool stuff (last edit, post #60770 is a must see).

Same as my colleague, but I would also add Shingeki no Bahamut Virgin Soul to the list if you want to see really well animated 2D dragons.

In addition to Kobayashi san no Maid dragon and his glorious dragons, mushoku is the only other case with such gigantic animation.
